This menu is an example of our delicious low-fat cuisine, prepared fresh every day at Pura Vida. Specific items vary each week depending on the availability of ingredients and the creative inspiration of our chefs. If you have a specific food preference or sensitivity, please let us know prior to and upon your arrival.
Saturday Breakfast - Scrambled eggs with sautéed vegetables, home-fried potatoes, homemade muffins, fresh fruit, yogurt, nuts, homemade granola, German bread, toasted if so desired, a huge variety of tropical jams, peanut butter, fresh juices. Lunch - Spiced carrot ginger soup, veggie and tofu curry wraps, a variety of gourmet mixed salads (grains, beans, vegetables, tofu, mango, avocados, chicken with exotic ingredients), salad greens, fruit, home baked cookies. Dinner - Broccoli almond soup, Costa Rican black beans, spicy rice with toasted sesame, Costa Rican cabbage salad, steamed vegetables, home made tortillas, fresh guacamole, pico de gallo, sautéed plantain grilled fish or barbecued chicken.
Sunday Breakfast - Whole grain pancakes with stewed apples with cinnamon and honey, made-to-order omelets, fruit, yogurt, nuts, homemade granola, fresh juices, breads, jams. Lunch - Chilled gazpacho, broccoli quiche, marinated tofu salad, beet salad with walnuts, lemon, olive oil and celery, variety of mixed vegetable salads and greens. Dinner - Spinach soup, baked fish with fresh basil, grilled tofu, pasta or roasted potatoes, sautéed vegetables, salad, whole grain garlic bread, home made.
Monday Breakfast - Typical Costa Rican - Gallo Pinto (rice and beans), scrambled eggs, grilled plantain, homemade salsa, fruit, yogurt, nuts, granola, juices, jams, breads. Lunch - Garbanzo soup, tuna and egg salads, grain and vegetable salads, whole wheat rolls, hummus and assorted Costa Rican cheeses. Dinner - Vegetable soup, grilled chicken, tofu nut loaf, mashed yucca (local root vegetable), mushroom gravy, steamed broccoli and baby squash, salads.
Tuesday Breakfast - Oatmeal, omelets, scrambled tofu, home-fried potatoes, brown rice primavera, fruit, raisins, yogurt, nuts, granola, juices, breads, jams. Lunch - Lasagna, with chicken or tofu, assorted vegetable salads, green salads with apples, starfruit and nuts, garlic bread or buns. Dinner - Squash soup, stuffed fish, tofu and vegetable stir-fry, brown or white rice, steamed vegetables, spinach salad.
Wednesday Breakfast -Omelets, corn quesadillas, black beans, fruit, yogurt, nuts, granola, juices, breads, jams, peanut butter. Lunch - Miso soup, chicken and tofu salads with roasted bell peppers, mushrooms with red beans, mangos and baby vegetables, assorted green salads, whole grain bread, . Dinner - Chicken and tofu enchiladas, red beans, roasted vegetables, guacamole, salads.
Thursday Breakfast - Gallo Pinto, scrambled eggs, homemade tortillas, salsa, fruit, yogurt, nuts, granola, juices, breads, jams, peanut butter. Lunch - Tortilla soup, hummus, tabouli, pita bread, beet salad, avocado, mixed raw vegetables, carrot-raisin salad. Dinner - Onion soup, baked fish with coconut, Indonesian tofu curry, brown rice, steamed vegetables, salads.
Friday Breakfast - French toast, oatmeal, fruit, raisins, yogurt, granola, juices, nuts, granola, juices, breads, jams, peanut butter. Lunch - Vegetable burritos, barley salad, bean and avocado salad, fresh cheese, baked spinach with olive oil and nuts, assorted salads. Dinner - Mushroom soup, breaded chicken, grilled tofu, polenta, ratatouille, and salad.
